2 cups (¾-inch) diced cooked skinless chicken breast
1 small cantaloupe, peeled, halved, seeded, and cut into ¾-inch pieces (about 2 cups)
1 cup seedless green grapes, halved
1 cup diced celery
½ cup chopped red onion
2 tablespoons chopped fresh basil
½ cup fat-free mayonnaise
¼ teaspoon salt
¼ teaspoon black pepper
12 small romaine lettuce leaves
Toss together all ingredients except romaine in large bowl. Place 3 lettuce leaves on each of 4 plates; top each serving with about 1½ cups of chicken salad.
