Apple, Endive & Smoked Turkey Salad

2 tablespoons champagne vinegar

1 tablespoon olive oil

2 shallots, minced

2 teaspoons Dijon mustard

¼ teaspoon black pepper

1 Gala or Braeburn apple, unpeeled, cored, and thinly sliced

2 heads Belgian endive, thinly sliced lengthwise

1 bunch watercress, trimmed

1 (¾-pound) piece skinless smoked turkey breast, cut into ¼-inch strips

To make dressing, whisk together vinegar, oil, shallots, mustard, and pepper in serving bowl. Add all remaining ingredients; toss until mixed well.

PER SERVING (1 salad): 212 Cal, 7 g Total Fat, 1 g Sat Fat, 0 g Trans Fat, 39 mg Chol, 882 mg Sod, 23 g Carb, 8 g Sugar, 9 g Fib, 21 g Prot, 210 mg Calc.

FYI  You can use just about any favorite apple in this tasty salad, including Golden Delicious, Granny Smith, and Red Delicious.
