4 slices turkey bacon, halved
¾ pound shelled and deveined large shrimp
2 teaspoons chili powder
8 (1-ounce) slices whole grain bread
½ Hass avocado, pitted, peeled, and mashed
2 cups lightly packed baby spinach
1 Spray panini maker with nonstick spray and preheat to high.
2 Place bacon in panini maker. Close lid and cook until browned and crisp, about 6 minutes. Drain on paper towels.
3 Meanwhile, toss together shrimp and chili powder on sheet of foil. Place shrimp in panini maker. Close lid and cook until just opaque in center, about 1 minute.
4 Spray one side of each slice of bread with olive oil nonstick spray. Place, sprayed side down, on work surface. Spread avocado evenly on 4 slices of bread. Top each with 2 pieces of bacon, one-fourth of shrimp, and ½ cup of spinach. Cover with remaining slices of bread, sprayed side facing up.
5 Place sandwiches in panini maker. Close lid and cook until bread is well marked and crisp, about 4 minutes.
