Avocado Dandelion Salad

4 carrots, julienned
2 cups dandelion greens, chopped
1 lg ripe avocado, peeled and pitted
1 Tbs fresh squeezed lemon juice
1 clove garlic, minced
salt and black pepper to taste
dash cayenne pepper
½ tsp paprika
1 Tbs nutritional yeast (optional)
  1. Julienne the carrots with a peeler (we usually leave the skins on) and mix with chopped dandelion greens.
  2. Blend the avocado, lemon juice, garlic, salt and black pepper, cayenne, paprika, and nutritional yeast, and massage into the salad. Leave to set for 5 minutes, then serve.
