Mix shredded sweet potato with the egg, cinnamon, and salt.
Melt the fat on the waffle griddle and cook the sweet potato mixture. (We use a ceramic waffle iron.) Cook until golden.
Top with your favorite fruits; spices such as cinnamon; proteins to make the waffles savory; fats such as nut butters, coconut cream, or grass-fed organic cream or butter. Be adventurous!
To make the waffles savory, omit cinnamon and add another spice, such as cumin, if you want!
