Red peppers and green beans, nicely seasoned, combine to form a colourful and nutritious salad that is appropriate for any meal. This dish is also good served at room temperature.

225 g (8 oz) (2 large) red peppers (bell peppers)
1½ tablespoons groundnut (peanut) oil
2 tablespoons coarsely chopped garlic
1½ teaspoons salt
225 g (8 oz) (1 cup) French (green) beans, trimmed
1 teaspoon sugar
2 tablespoons water
1 Deseed the peppers and cut them into strips.
2 Heat a wok or large frying pan and add the oil. Add the garlic, salt, peppers and French beans and stir-fry for 2 minutes. Then add the sugar and water and cook for another 4 minutes or until the vegetables are tender. Serve at once.
