Curry-flavoured Oil

Makes 300 ml (10 fl oz)

300 ml (10 fl oz) groundnut (peanut) or vegetable oil

6 tablespoons Madras curry powder

1 Heat a wok or large frying pan over a high heat and add the oil. When it is very hot and slightly smoking, remove from the heat, add the curry powder and stir to mix well. Allow the mixture to cool thoroughly and leave to stand overnight.

2 Strain the mixture through a fine sieve. Use at once or store, tightly covered, in the refrigerator for up to 6 months. Bring to room temperature before using.
