BAKER’S OVEN-ROASTED POTATOES

PATATAS PANADERAS AL HORNO

SERVES 6 TO 8 AS A SIDE DISH

This classic guarnición (side dish) is simple but devilishly tasty. Serve it with meat, poultry, or fish dishes, grilled quail, or game. The name comes from bakers who would put a big tray of these in their bread oven to cook.

1. Preheat the oven to 400°F/200°C/gas mark 6.

2. In a large bowl, blend the potatoes and onions, season with salt, and add the olive oil. Toss to blend well. Transfer to a large ovenproof baking dish or roasting pan and cover with aluminum foil.

3. Bake until the potatoes are tender, about 45 minutes. Remove the foil and continue to bake until golden at the edges, about 10 minutes.

4. Remove from the oven. Until ready to serve, loosely cover with foil tented in the middle. This will keep them warm without steaming them.
