Slow cooked Eggplant, Zucchini and Tomato
Serves 2
Ingredients - Allergies: SF, GF, DF, EF, NF
• 1/2 cups sliced zucchini
• 1/2 cups sliced tomatoes
• 2 tbsp.
oil
• 1/2 cups sliced eggplant
• 1/4 tsp. salt
• 1/4 tsp. ground black pepper
• 1/2 tsp. minced garlic
Instructions
Arrange all ingredients in the slow cooker dish, cover and cook on low for 4 hours.
