Chinese Eggplant, Chicken & Green Onions Stew
Serves 2
Ingredients - Allergies: SF, GF, DF, EF, NF
• 1 cup chopped onions
• 2 tbsp.
coconut oil
• Salt, ground black pepper to taste
• 1 pound cubed chicken
• 1/4 cup sliced green onions
• 1 cup chicken broth
• 1 cup halved Chinese eggplants
• 1/4 cup tomato paste.
Instructions
Put ingredients in the slow cooker. Cover, and cook on low for 8 hours.
