FAST FIX

PIZZA PANCAKES

Anything goes in these pancakes for pizza lovers. We like pepperoni and mozzarella in the batter, but garlic is a great addition, too!

Takes: 30 min. • Makes: 14 pancakes

2 cups biscuit/baking mix

2 tsp. Italian seasoning

2 large eggs

1 cup 2% milk

1/2 cup shredded part-skim mozzarella cheese

1/2 cup chopped pepperoni

1 plum tomato, chopped and seeded

1/4 cup chopped green pepper

1 can (8 oz.) pizza sauce, warmed

1. In a bowl, combine biscuit mix and Italian seasoning. In another bowl, whisk eggs and milk until blended. Add to dry ingredients, stirring just until moistened. Stir in the cheese, pepperoni, tomato and pepper.

2. Preheat griddle over medium heat; grease lightly. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with pizza sauce.

Per serving: 2 pancakes with 2 tablespoons pizza sauce equals 272 cal., 13g fat (5g sat. fat), 70mg chol., 827mg sodium, 28g carb. (4g sugars, 2g fiber), 10g pro.
