GARDEN CUCUMBER SALAD

If you like cucumber salad as I do, this one’s a cool pick. With a mix of fresh veggies, feta and Greek seasoning, it’s a refreshing addition to summer meals.

Takes: 10 min. + chilling • Makes: 12 servings

4 medium cucumbers, cut into 1/2-in. pieces (about 7 cups)

2 medium sweet red peppers, chopped

1 cup cherry tomatoes, halved

1 cup (4 oz.) crumbled feta cheese

1/2 cup finely chopped red onion

1/2 cup olive oil

1/4 cup lemon juice

1 Tbsp. Greek seasoning

1/2 tsp. salt

Place all ingredients in a large bowl; toss gently to combine. Refrigerate, covered, at least 30 minutes before serving.

Per Serving: 3/4 cup equals 125 cal., 11g fat (2g sat. fat), 5mg chol., 431mg sodium, 5g carb. (3g sugars, 2g fiber), 3g pro. Diabetic Exchanges: 1 vegetable, 2 fat.
