1/2 lb. sliced fresh mushrooms
1 small onion, chopped
2 tsp. butter
2 tsp. olive oil
1 garlic clove, minced
1/4 tsp. salt
1/4 tsp. pepper
1 pkg. (9 oz.) fresh spinach
1/2 pkg. (4 oz.) cream cheese, cubed
1/2 cup shredded Parmesan cheese
1. In a large skillet, saute the mushrooms and onion in butter and oil until tender. Add the garlic, salt and pepper; cook for 1 minute longer.
2. Add spinach and cream cheese; cook and stir until cream cheese is smooth and spinach is wilted. Sprinkle with cheese.
