During the Depression years my savvy grandmother whipped up recipes that many of us still use today, like this homey, cinnamon-scented apple pudding.

Prep: 15 min. • Bake: 40 min. + standing • Makes: 6 servings
1 cup packed brown sugar
1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 cup 2% milk
3 medium tart apples, peeled and chopped
2 Tbsp. butter, cubed
2 cups boiling water
Vanilla ice cream, optional
1. Preheat oven to 400°. In a large bowl, mix the first five ingredients. Add milk; stir just until blended. Fold in the apples. Transfer to a greased 2 1/2-qt. deep baking dish. Dot with butter.
2. Pour boiling water over the top. Bake, uncovered, 40-45 minutes or until golden brown. Let stand for 15 minutes before serving. If desired, serve with ice cream.
