Makes 8 servings
8 green peppers, tops removed
1 lb. ground turkey
1/3 c. onion, chopped
1 c. reduced-fat shredded mild Cheddar cheese, divided
1-1/2 c. croutons
2 tomatoes, chopped
1/2 t. Worcestershire sauce
salt to taste
Bring a large pot of water to a boil; add peppers and boil for 5 minutes. Drain peppers well; arrange in a lightly greased shallow baking dish and set aside. Brown turkey and onion together in a skillet over medium heat; drain. Stir in 1/2 cup cheese, croutons, tomatoes and Worcestershire sauce. Sprinkle salt inside peppers; fill peppers with turkey mixture. Cover and bake at 350 degrees for 25 minutes. Uncover and sprinkle with remaining cheese; bake an additional 5 to 10 minutes.
