Veggie Grinders

Makes 4 servings

4 whole-wheat sub buns, split

4 slices reduced-fat Swiss cheese

4 slices fat-free American cheese

1/4 c. reduced-fat Italian salad dressing

Garnish: leaf lettuce, sliced tomatoes, mushrooms, green peppers, green onions, olives

Optional: hot pepper slices, chopped fresh parsley

Lay sub buns cut-side up on a baking sheet. Arrange a Swiss cheese slice on each top and an American cheese slice on each bottom. Bake at 350 degrees just until cheese melts, about 10 minutes. Remove from oven; layer bottoms with vegetable slices. Sprinkle vegetables with salad dressing; garnish with hot pepper and parsley if desired. Add bun tops; slice each sandwich in half and serve warm.
