Makes 4 servings
1 cantaloupe, peeled, seeded and cubed
1 honeydew, peeled, seeded and cubed
3 T. lime juice
2 T. balsamic vinegar
3 T. honey
6-oz. pkg. mixed greens
Combine melon cubes in a large bowl; set aside. In a small bowl, whisk together lime juice, vinegar and honey, blending well. Pour over melon and toss. Arrange greens on salad plates. Using a slotted spoon, remove melon from bowl and arrange over greens. Drizzle with dressing from bowl.
Whip up some creamy Dijon-Parmesan salad dressing…low-fat and delicious over fruit salad or grilled chicken. Combine one cup buttermilk, one cup fat-free sour cream, 1/3 cup grated Parmesan cheese, one tablespoon Dijon mustard, one teaspoon lemon juice and 1/4 teaspoon pepper. Blend until smooth.
