Spinach-Orange Tossed Salad

Makes 6 servings

10 c. baby spinach

3 oranges, peeled and sliced

1 red onion, sliced and separated into rings

1/3 c. orange juice

1/3 c. cider vinegar

1/3 c. olive oil

1/4 c. fresh cilantro, chopped

2 T. sugar or equivalent no-calorie sweetener

In a large bowl, combine spinach, orange slices and onion rings; set aside. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well to combine and pour over spinach mixture; toss.

Keep wooden salad bowls looking their best…wash them with warm, soapy water and dry, then rub inside and out with wax paper. The wax from the paper will keep the surface of the bowl sealed.
