Makes 6 servings
6 tomatoes, thickly sliced
1/4 c. green onion, thinly sliced
1/4 c. fresh parsley, minced
2 T. fresh thyme, minced
1 clove garlic, minced
1 t. salt
1/4 t. pepper
2/3 c. olive oil
1/4 c. red wine vinegar
Arrange tomato slices on a shallow plate or dish; set aside. In a small bowl, combine onion, herbs, garlic, salt and pepper; sprinkle mixture over tomatoes. Shake together oil and vinegar in a jar with a tightly fitted lid; pour over tomatoes. Cover and refrigerate for several hours or overnight, spooning dressing over tomatoes occasionally. Drain tomatoes before serving, if desired.
For a little extra zing, add a squeeze of lemon or lime to any salad or veggie dish.
