Makes about 3 cups
12-oz. container low-fat cottage cheese
1 c. reduced-fat mayonnaise
1 T. lemon juice
1.4-oz. env. vegetable soup mix
1 T. onion, grated
10-oz. pkg. frozen spinach, thawed and drained
8-oz. can water chestnuts, drained and chopped
reduced-fat snack crackers or sliced vegetables
Spoon cottage cheese into a blender; blend until smooth. Spoon into a bowl; combine with mayonnaise, lemon juice, soup mix, onion, spinach and water chestnuts. Mix well and chill. Serve with crackers or vegetables for dipping.
