Makes one dozen
1/2 c. honey
1/2 c. brown sugar, packed, or equivalent sugar substitute
1 c. reduced-fat crunchy peanut butter
4 c. whole-grain rice flake cereal
1 c. dried fruit, chopped
In a heavy saucepan over medium heat, bring honey and brown sugar to a boil; remove from heat. Add peanut butter; stir until melted. Fold in cereal and fruit. Press mixture into an 11"x9" baking pan sprayed with non-stick vegetable spray. While still warm, cut into bars with a pizza cutter. Let cool.
