quinces, rubbed to remove down, halved if very large
caster sugar
Preheat the oven to 150°C/300°F/Gas 2
Cover the quinces with foil and bake for about 1.1/2 hours until soft but unbroken.
Cool, halve and remove core. Push through a vegetable mill.
Weigh the pulp and add to an equal amount of caster sugar in a saucepan. Bring to the boil, stirring constantly, until the quince darkens and comes away from the pan sides. This could take up to 30 minutes. Pour on to a large flat cold plate and leave to set.
