1 large sweet potato, peeled and cut into long chunks
2 carrots, peeled and halved lengthways
½ small fennel bulb, cut into long wedges
300 ml/1¼ cups coconut water
fennel seeds, for sprinkling

Juice the sweet potato, carrots and fennel bulb. Stir in the coconut water and serve sprinkled with fennel seeds.
