Apricot smoother

A creamy, filling smoothie that doubles-up as a delicious dessert if you’re looking for something sweet and nutritious. You could freeze the bananas first, then use from frozen to make a sort of healthy ice cream – do peel them first.

6 unsulphured dried apricots

2 medium bananas, peeled and broken into pieces

150 ml/⅔ cup plain bio yogurt

½ teaspoon vanilla extract

100 ml/⅓ cup coconut drinking milk

2 teaspoons maca powder (see page 16)

bee pollen (see page 15), for sprinkling

SERVES 2

Soak the apricots in 100 ml/⅓ cup of pure or filtered water for 30 minutes (or overnight if making the smoothie the next day). Put the apricots, bananas, yogurt, vanilla extract, coconut drinking milk and maca powder in a blender and blend until smooth. Sprinkle with bee pollen before serving.
