Berry good

The pears add a hint of sweetness to this mildly aniseedy juice. It makes a good energy-boosting drink mid-afternoon if you need something to help keep you going through to dinnertime.

2 medium carrots, peeled and halved lengthways

1 Little Gem lettuce, leaves separated

½ medium fennel bulb, cut into long wedges

1 small handful of flat-leaf parsley

2 pears, quartered and cored

1 teaspoon lemon juice

2  teaspoons açaí berry powder (see page 14)

SERVES 2

Juice the carrots, lettuce, fennel, parsley and pears. Stir in the lemon juice and açaí berries.

lettuce is nutritionally most potent when eaten raw. Despite being 90 per cent water, it contains useful amounts of vitamins and minerals, particularly iron, folates, vitamins A and C. The outer, darker leaves tend to be more nutrient dense than the paler inner leaves so it’s best to juice the whole thing and drink straightaway before it discolours.
