Filling, sustaining and a good source of fibre, this drink makes a great start to the day and will provide you with plenty of energy for the morning ahead. Açaí berries have fat-burning properties, reputedly speeding up digestion, reducing cravings and boosting the metabolism.
10 dried ready-to-eat pitted prunes
4 ripe apricots, halved and pitted
juice of 1 red grapefruit
250 ml/1 cup coconut water
juice of ½ lime
2 teaspoons açaí berry powder (see page 14)
SERVES 2
Soak the prunes in 50 ml/3½ tablespoons warm water for 30 minutes until softened. Put the prunes and their soaking water, apricots, grapefruit, coconut water, lime juice and açaí berry powder in a blender and blend until smooth.
