Double coconut and blueberry boost

Described as the ‘cure for all illnesses’, fresh coconut has antibacterial, anti-parasitic and antifungal properties. It’s also great for boosting energy levels so when combined with blueberries, apple and açaí berry powder this drink packs a powerful punch; drink for breakfast and you’ll be ready to go!

2 small handfuls of freshly chopped coconut

2 handfuls of blueberries

2 apples, peeled, cored and chopped

juice of ½ lime

2 teaspoons açaí berry powder (see page 14)

Prepare the fresh coconut by carefully banging a screwdriver into one of the ‘eyes’. Pour the coconut water inside into a measuring jug/pitcher and top with pure or filtered water to make 300 ml/1 ¼ cups. Pour the coconut water into a blender. Using the back of a large blade, tap the circumference of the coconut to open it up. Scrape the fresh coconut out of the shell, the equivalent to 2 small handfuls, and add to the blender with the blueberries, apples, lime juice and açaí berry powder. Blend until almost smooth; there will be flecks of fresh coconut but if you want a smoother drink, blend again.
