Melon and ginger have always been great partners and this refreshing, long drink, topped up with sparkling mineral water is no exception; it’s perfect for sipping, helping to curb the appetite and keep you hydrated.
½ medium cucumber, quartered lengthways
¼ large honeydew melon, peeled, deseeded and sliced
2 kiwi fruit, peeled and quartered
1-cm/⅜-inch piece fresh root ginger, unpeeled
juice of ½ lime juice
100 ml/⅓ cup sparkling mineral water
¼ teaspoon chia seeds (see page 15)
SERVES 2
Juice the cucumber, melon, kiwi and ginger then stir in the lime juice and sparkling water. Sprinkle the chia seeds over before serving.
