Pomegreat

Pomegranates are a bit of a fiddle to prepare as you need to remove all the seeds before you start, yet they are well worth it for their colour and flavour. They also produce a surprisingly generous amount of juice despite the high amount of seeds.

1 medium pineapple, peeled, cored and cut into long wedges

seeds from 1 large pomegranate

1 teaspoon lemon juice

2  teaspoons camu camu powder (see page 15)

SERVES 2

Juice the pineapple and pomegranate then stir in the lemon juice and camu camu.

pineapple benefits the digestive system thanks to the presence of the antibacterial enzyme bromelain. It is also an anti-inflammatory, helping arthritis sufferers, and is an excellent source of vitamin C, manganese and other antioxidants.

cranberry has long been recognised for its ability to curb cystitis and other infections of the urinary tract and, more recently, has been found to reduce levels of bacteria in the bladder and kidneys. It also has anti-inflammatory properties and supports the immune system thanks to the valuable amount of phytonutrients.
