Skin brightener

This deliciously fruity, pink juice is rejuvenating and nutritious. Goji berries, despite their diminutive size, are a small powerhouse of nutrients and are particularly good for the health of the eyes.

4 tablespoons goji berries

3 handfuls of strawberries, hulled

½ medium pineapple, peeled, cored and cut into chunks

1–2 teaspoons camu camu powder (see page 15)

100 ml/⅓ cup sparkling mineral water

SERVES 2

Soak the goji berries in 4 tablespoons pure or filtered water for 15 minutes until softened, then tip them and the soaking water into a blender with the strawberries, pineapple and camu camu and blend until smooth. Stir in the sparkling water and serve.
