With its wonderful colour of a setting sun, this blended juice could make a delicious dessert to follow an evening meal if you’re looking for something that is not only sweet but also good for you.
6 unsulphured dried apricots
juice of 3 large oranges
1 large carrot, coarsely grated
juice of 1 small lemon
2 teaspoons açaí berry powder (see page 14)

Soak the apricots in 100 ml/⅓ cup of pure or filtered water for 30 minutes (or overnight if making the juice the next morning). Put the apricots, soaking water, orange juice, carrot, lemon juice and açaí berry powder in a blender and blend until smooth.
apricots The dried variety, rather than fresh, are a useful source of energy. They may be slightly higher in sugar and calories than fresh, but they are a concentrated source of minerals such as iron and potassium and are richer in fibre, which keeps you full for longer. Sulphur, often used as a preservative in dried apricots, is best avoided, especially by those who suffer from asthma.
