I love the hit from the lime juice and fresh mint in this vibrantly green, zingy juice. This makes a refreshing, cooling drink served on ice or you could top it up with chilled carbonated mineral water. If serving this to non-vegetable lovers, you’d never know the kale was there!
4 medium green apples, quartered, cored and cut into wedges
2 large handfuls of curly kale
1 handful of fresh mint
juice of ½-1 lime
1–2 teaspoons barleygrass powder (see page 14) crushed ice, to serve
SERVES 2
Juice the apples, kale and three-quarters of the mint – add a splash of the lime juice if the juicer struggles with the kale. Stir the lime juice and barleygrass into the juice and serve on crushed ice. Chop the reserved mint leaves and sprinkle over the top.
