Echinacea is traditionally used to fight colds, flu and other infections and works by stimulating the immune system. Make sure you choose ripe tomatoes since that’s when they are at their most nutritious.
7 ripe, vine-ripened tomatoes, halved or quartered
4 large carrots, peeled and halved lengthways
2 large handfuls of sliced red cabbage
1 celery stalk, halved crossways
2–3 teaspoons Worcestershire sauce
a few echinacea drops (see page 18) (check the recommended dosage on the bottle)
chopped fresh chilli/chile or chilli/red pepper flakes, for sprinkling (optional)

Juice the tomatoes, carrots, red cabbage and celery then stir in the Worcestershire sauce and echinacea drops. Serve sprinkled with chilli/chile.
