About the Author
Calum Franklin is the Executive Chef of Holborn Dining Room, a grand British brasserie in the heart of London. He created The Pie Room at the restaurant in 2018, a kitchen and pie shop designed to reflect the rich history of savoury pastry in Britain across the centuries.
Calum was awarded Hotel Chef of the Year 2019 at the prestigious Catey Awards, and Holborn Dining Room ranked in the top restaurants in the UK at the highly competitive National Restaurant Awards in 2019 for its third consecutive year.
