Garlic & Tomato Chicken

Makes 4 to 6 servings

1 lb. boneless, skinless chicken breasts

2 15-oz. cans diced tomatoes

1 onion, chopped

1 clove garlic, minced

1 T. dried basil

salt and pepper to taste

1-1/4 c. water

cooked rotini pasta

Place chicken breasts in a slow cooker. Mix together remaining ingredients except rotini and pour over chicken. Cover and cook on low setting for 6 to 8 hours. Shred chicken with a fork; stir back into mixture in slow cooker. Serve over rotini.

A quick go-with for a slow-cooker meal...toss steamed green beans, broccoli or zucchini with a little olive oil and chopped fresh herbs.
