Piquant French Dressing


Makes about 1/2 cup


Ingredients


2 tbs. granulated sugar

1/2 tsp. salt

1/2 tsp. paprika

1/2 tsp. dry mustard

1/8 tsp. black pepper

1/2 tsp. celery seeds

1/2 tsp. grated onion

2 tbs. lemon juice

1/4 cup plus 2 tbs. vegetable oil

1 garlic clove, sliced in half


Directions


In a mixing bowl, add the granulated sugar, salt, paprika, dry mustard, black pepper, celery seeds, grated onion and lemon juice. Using a mixer on medium speed, beat until well combined and smooth. The sugar should be dissolved. This takes about 1 minute with my mixer.


With the mixer still running, slowly add the vegetable oil to the mixing bowl. Beat until well combined or about 2 minutes. Turn the mixer off. Add the garlic to the dressing. Cover the bowl and refrigerate the dressing at least 2 hours.


Remove the garlic pieces and whisk the dressing before serving.
