Roquefort Dressing


Makes 1 1/2 cups


Ingredients


3 oz. Roquefort cheese, crumbled

1 tbs. minced onion

1 garlic clove, minced

1/2 cup mayonnaise

1/2 cup sour cream

1 tbs. vinegar

1 tbs. lemon juice

1/8 tsp. black pepper


Directions


In a small mixing bowl, add the cheese, onion and garlic. Using a mixer on low speed, beat for 3 minutes. The mixture should be well combined and creamy. Add the mayonnaise, sour cream, vinegar, lemon juice and black pepper. Beat for 2 minutes or until combined and smooth.


Chill the dressing for 4 hours before serving. Store the dressing covered in the refrigerator no more than 1 week.
