Makes a little over 1/2 cup
Ingredients
1/2" piece fresh ginger, peeled
2 tbs. red wine vinegar
1 tbs. chopped sweet onion
1 tbs. honey
1 tsp. grated orange zest
1/4 tsp. dry mustard
1/4 tsp. salt
1/4 cup olive oil
Directions
Add the ginger, red wine vinegar, onion, honey, orange zest, dry mustard and salt to the blender container. Process until blended. With the blender running, slowly add the olive oil. Process until smooth.
Strain the dressing through a fine sieve but reserve the liquid. Discard the solid pieces and use the liquid as your vinaigrette.
