Makes 1 1/4 cups
Ingredients
1/4 cup unsweetened pineapple juice
2 tbs. frozen orange juice concentrate, thawed
2 tbs. lemon juice
2 tbs. honey
1 egg, beaten
3 tbs. nonfat dry milk powder
2 tbs. plus 1 tsp. ice cold water
Directions
In a small sauce pan over medium low heat, add the pineapple juice, orange juice, lemon juice, honey and egg. Stir constantly and cook until the mixture thickens and will coat the back of a spoon. Remove the pan from the heat and cool completely before using.
While the mixture is cooling, add the dry milk powder to a mixing bowl. Add the mixer beaters to the bowl. Place the bowl in the freezer. When the bowl and mixer beaters are frozen, remove them from the freezer. Add the ice cold water and beat on high speed with a mixer until stiff peaks form.
Gently fold the juice mixture from the sauce pan into the mixing bowl. Spoon the dressing into an airtight container and chill before using. Gently fold the dressing into your favorite fruit salad.
