Party-Time Pineapple BBQ Meatballs

You’ll Need: medium bowl, large bowl, extra-large skillet with a lid, nonstick spray

Prep: 15 minutes • Cook: 15 minutes

1 cup canned crushed pineapple packed in juice (not drained)

1 cup Clean & Hungry BBQ Sauce (recipe and store-bought alternatives here)

1 pound raw extra-lean ground beef (4% fat or less)

¼ cup whole-wheat panko breadcrumbs

¼ cup egg whites (about 2 large eggs’ worth)

2 tablespoons finely chopped fresh cilantro

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon each salt and black pepper

1. Thoroughly drain the juice from the pineapple into a medium bowl. Add ¾ cup BBQ sauce, and mix until uniform.

2. Place drained pineapple in a large bowl. Add remaining ingredients, including remaining ¼ cup BBQ sauce. Mix until uniform.

3. Firmly and evenly form beef mixture into 20 meatballs.

4. Bring an extra-large skillet sprayed with nonstick spray to medium-high heat. Place meatballs in the skillet. Cook and rotate until browned on all sides, about 5 minutes.

5. Reduce heat to medium low. Carefully add BBQ sauce mixture, coating the meatballs. Cover and cook for 10 minutes, or until meatballs are cooked through.
