Beef Zucchini So Low Mein, 213
Spiralized veggies are among this decade’s hottest healthy-eating trends. With so few calories and the perfect texture, they are ON POINT as a pasta swap! Spiralized zucchini is such a phenomenon, you can often find ready-to-cook zucchini noodles in the produce section of the grocery store. Of course, you can easily make your own “z’paghetti.” Just get your hands on a spiral veggie slicer (sold online and at places like Bed Bath & Beyond), and follow these simple steps …
1. Cut off and discard zucchini ends.
2. Stick one end of the zucchini into the spiralizer.
3. Twist the zucchini, and watch as oodles of noodles emerge!
4. Roughly chop for shorter noodles.
No spiralizer? No problem! Use a standard veggie peeler to peel the zucchini into thin strips, rotating it after each strip to ensure evenly sized noodles. Roughly chop, if needed.
Just so you know …
An 8-ounce (medium) zucchini yields about 1 cup of raw zucchini noodles.
