You’ll Need: 9-inch by 5-inch loaf pan, nonstick spray, medium bowl, large bowl

½ cup canned crushed tomatoes
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 pound raw extra-lean ground beef (4% fat or less)
1 cup finely chopped onion
1 cup finely chopped green bell pepper
1 cup finely chopped mushrooms
¼ cup whole-wheat panko breadcrumbs
¼ cup egg whites (about 2 large eggs’ worth)
½ teaspoon each salt and black pepper
¾ cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese
1. Preheat oven to 400 degrees. Spray a 9-inch by 5-inch loaf pan with nonstick spray.
2. In a medium bowl, combine crushed tomatoes with ½ teaspoon each garlic powder, onion powder, and Italian seasoning. Mix well.
3. In a large bowl, combine remaining ½ teaspoon each garlic powder, onion powder, and Italian seasoning. Add all remaining ingredients except mozzarella and Parm.
4. Add half of the seasoned tomatoes to the large bowl, and mix thoroughly. Transfer to the loaf pan, and smooth out the top.
5. Top with remaining seasoned tomatoes.
6. Bake until cooked through, about 45 minutes.
7. Top with mozzarella and Parm. Bake until melted, about 5 minutes.
