Who needs an oversized carby bun? Enjoy sloppy joe goodness served in crispy lettuce leaves!

You’ll Need: medium bowl, large skillet, nonstick spray
Prep: 15 minutes • Cook: 20 minutes
1¼ cups canned crushed tomatoes
2 tablespoons tomato paste
1 tablespoon honey
1 tablespoon red wine vinegar
2 teaspoons molasses
1 pound raw extra-lean ground beef (4% fat or less)
¼ teaspoon each salt and black pepper
1 cup chopped onion
1 cup chopped red bell pepper
1 tablespoon apple cider vinegar
10 large iceberg or butter lettuce leaves
1. In a medium bowl, combine crushed tomatoes, tomato paste, honey, red wine vinegar, and molasses. Mix until uniform.
2. Bring a large skillet sprayed with nonstick spray to medium-high heat. Add beef, and sprinkle with salt and black pepper. Cook and crumble for about 5 minutes, until mostly cooked.
3. Reduce heat to medium. Add onion, bell pepper, and apple cider vinegar. Cook, stir, and crumble for about 6 minutes, until beef is fully cooked and veggies have softened.
4. Reduce heat to low. Add tomato mixture. Cook and stir until hot, about 5 minutes.
5. Let cool slightly. Evenly distribute mixture among lettuce leaves, about ⅓ cup each.
