You’ll Need: baking sheet, medium bowl

2 slices whole-grain bread with 60 to 80 calories per slice
One 2.6-ounce pouch albacore tuna in water, thoroughly drained and flaked
2 tablespoons finely chopped cucumber
1 tablespoon finely chopped onion
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
Dash black pepper
1 slice reduced-fat cheddar cheese
1. Preheat oven to 450 degrees.
2. Lightly toast bread, and lay on a baking sheet.
3. In a medium bowl, mix all remaining ingredients except cheese.
4. Evenly top one bread slice with the tuna mixture. Top with cheese and the other bread slice.
5. Bake until bread is fully toasted and cheese has melted, about 5 minutes.
