You’ll Need: blender or food processor, large skillet, nonstick spray, offset spatula or flexible rubber spatula

Prep: 10 minutes • Cook: 15 minutes

¾ cup egg whites (about 6 large eggs’ worth)

½ cup whole-wheat flour

½ teaspoon baking powder

¼ teaspoon each salt and black pepper

1. Place all ingredients in a blender or food processor. Add ½ cup water, and blend until uniform.

2. Bring a large skillet sprayed with nonstick spray to medium heat. Pour ¼th of the batter (about ½ cup) into the skillet, quickly tilting the skillet in all directions to evenly distribute.

3. Cook until edges are firm and bottom is lightly browned, about 2 minutes.

4. Carefully flip with an offset spatula or flexible rubber spatula.

5. Cook until lightly browned on the other side, about 1 minute.

6. Repeat three times to make three more tortillas. If needed, remove skillet from heat and re-spray after making each tortilla.

7. Let cool. Cover and refrigerate until ready to use.

Freeze It: Tortilla Edition

To Freeze: Stack them with a layer of wax paper in between each tortilla. Place them in a freezer bag, seal, and lay flat in the freezer.

To Thaw: Place one tortilla between 2 damp paper towels on a microwave-safe plate. Microwave for 30 seconds, or until thawed.
