Also known as
xian bing
, this is a favourite of mine from my childhood, when I visited my extended family
in north China. I would describe this as a love child of savoury pie and pancakes. My family’s version is
often filled with my mother’s signature stir-fried tofu crumbles with aromatic herbs and veggies, encased
in a crisp exterior made from wholewheat and plain flour. There are lots of textures and flavours, so this is
sure to be a crowd-pleaser. These are also freezable, and thus are good for making ahead and reheating
whenever you don’t feel like cooking.
