Kway chap
is another well-loved classic found in Singapore’s hawker centres. The name comes from the
dish’s two parts: flat and broad rice sheets (the
kway
) in a soup, accompanied by a side dish of braised
offal and other meat ingredients in a rich soy sauce based gravy (the
chap
). In this version, we will use
beans, nuts, mushrooms, seitan and various types of soy-based ingredients for a wholesome, slurp-
worthy dish.
