There really is nothing like cooking over hot coals or gas-driven flames, is there? I don’t know what it is that draws you to stand silently next to the barbecue, mesmerised by the flames as they reach out and gently caress your perfectly seasoned steak. I love the symphony of sounds that rise from the grill as your sausages pop, your chicken sizzles and your corn on the cob explodes – intermittently accompanied by the glorious sound of the top being prised from the bottle of your favourite brew, of course! I love cooking on the barbecue at night as the glow from the flames acts like a beacon for people to gather around in silence, needing nothing more than the sight, the sounds and the smells coming from the barbecue. It truly is a diverse way of cooking – if it has a lid it doubles as an oven, without a lid it’s a stovetop, and all the while it imparts that wonderful smoky flavour to your food, not to mention the lovely caramelised chargrilled crust that only a flame or hot coals can give.
