We should all say a silent thanks to a truly remarkable living organism called Saccharomyces cerevisiae, for without it we wouldn’t have bread or beer as we know them. Yes, for the last 5000 years this very clever little fella – otherwise known as yeast – has been responsible for converting the fermentable sugars found in bread dough and beer wort into carbon dioxide, which helps to create light, airy bread and nice, gassy beer. It is also responsible for creating the alcohol in our beer, which provides wonderful complex flavours – and using those flavours is what this book is all about. So what better way to pay homage to our yeasty friend than to combine the two ingredients it likes best – beer and flour – with a bunch of other delectable ingredients like apples, raisins, bananas, rhubarb, chocolate, spices, herbs, cheese, salami, or even some pumpkin, and bake them together until aromatic and golden. Some of these baked goodies are sweet and others are savoury, but I guarantee all of them are delicious!
