1 (2-inch) piece fresh ginger, peeled and thinly sliced

1. Preheat the oven to 350°F.
2. Place the cinnamon sticks, cardamom pods, and cloves on a small rimmed baking sheet and toast in the oven until the spices become fragrant, 6 to 7 minutes. Transfer the toasted spices to a large pot.
3. Add the ginger, brown sugar, and apple cider to the pot. Bring to a boil over medium-high heat, reduce the heat to medium-low, cover, and simmer, stirring occasionally, until the apple cider is infused with the ginger and spices, 2 hours 30 minutes.
4. Ladle the cider into mugs; adults might spike their own with a splash of spiced rum or bourbon if the mood strikes.
